Unless I am unaware of the existence of a cancel button, I would like to suggest that there be one maybe? Pretty pretty please. 
I have painfully scared away more than my fair share of blue jays and cardinals that were standing next to other prey because I targeted the wrong one of the two and can't exit out of the pounce QTE. My poor cat ends up failing the QTE cause I thought ESC button would cancel it and POOF there goes both prey haha
