Can kittens only get their pelts by taking aspects from you and your mate's pelt and mixing them (ex, they take blue from you and white from your mate and go with blue with white paws, or white with blue stripes), or can the colors of your mate and you's pelt mix (ex, a blue cat and a red cat have kittens, one of their kits turns out purple), or both?

It's a bit more to it than just that, but most of your examples are pretty close. This post sums it up pretty well. If you'd like some examples of possible kitten colors from certain pairings, there are two guides that currently exist on this forum that might give you an idea.

Its mostly the first, but I had a cinnamon & white cat breed with Lyrus and one of the kittens was purple. It was a while ago now so my memory is not perfect, but the coat could've been sort of blue with red stripes or something, tricking the eye into thinking it was purple. Who knows?
