i have two kittens, one at level 7 and one at level 4. will they grow up? how long will that take? and as for their pelts, do you eventually unlock their coat colors? if so, when?

It should take them roughly two seasons to a year (I'm not entirely sure) to grow up. Same for having them be born, if you have a nursery and agreed to have kits with your mate.
You get their coat colours once you are at 5 stars with them.

My kittens were born a year ago in-game. While they are bigger, they are not as big as me. They might not grow up until they reach level 10 in their training. I am only there with one of them.

When the kitten reaches lvl 10, it doesnt rlly grow up. I think it just takes time. As for the coats, you need to be lvl 5 friendship i believe with them to get the coats.

my kitten is level 9 but when i tried to level him up to level 10 it took a long time.. i think i dont level him up properly or it has to do something with his purrrsonality (and yes i just made a cat joke) but pls reply

Yeah, I find different personalities are good at doing different things. For example, the "shy" or "quiet" personality is good at herb collecting, if I'm right (I haven't had kits in a long time). There's no wrong way to level up your kitten (unless you're making them swim in the river or stand, that's wrong), and it all depends on the purrsonality. As your kits level up they get better and better at doing things, and it really takes a lot to get them from lvl 9 to lvl 10. What I do did was binge hunt in 1 specific tile where I knew prey was going to spawn. It helps a lot if you have max hunting on yourself so you can see the prey dots so you don't have to wander around aimlessly. But yes, it's because of the purrsonality. The "adventurous" personality likes fighting the best-- and I think they were good at hunting too. Anyways, yes.
