The modes make the game easier or more challenging, depending on the setting you choose. Harder difficulties make enemies stronger. They'll be more lethal with their attacks. Hunting will also be harder. Easier levels, on the contrary, have the opposite effect.
They don't really have a "negative" impact. It's just a matter of preference. If you want the game to be more challenging, choose a higher difficulty. If you're looking for casual gameplay, then choose an easier difficulty.
